This BBQ Apple Chicken Flatbread with caramelized onions is super easy. My kitchen is clean! I just finished painting my kitchen tile, more on that later, I love when my kitchen is clean and my counter top is clear. I can think more clearly and be inspired to cook. We love the flatbread at Makenzie River Restaurant and Bar. Particularly the BBQ apple chicken flatbread and decided to make my own version.
Aldi’s Flatbread
First a shout out to Aldi’s! Yes we all love Aldi’s finds. If you know me , I always make homemade pizza dough for my family & friends pizza nights. You can find the recipe here. You can certainly use that recipe and precook your flatbread but I was looking for fast and easy. This time it was Aldi’s to the rescue. They have these amazing flat breads in the bread section. Make sure to pick them up, you will thank me later. I usually just throw them in the freezer so I always have them on had at the last minute. This is the base of my flatbread. It makes it so easy to pop these together for a quick appetizer or lunch.
Make it easier – Prep Ahead
So if you do a little prep this recipe is even faster. I caramelized my onions and grilled my chicken in advance. You don’t have to but it makes it even easier to throw this flatbread together for a quick appetizer, lunch or dinner.
Ingredients needed
For the recipe you need the flatbread( pack of 2), 1 apple, 1 chicken breast, 2 onions, your favorite BB sauce ( I like Sweet Baby Ray), sharp cheddar cheese . You could even take a shortcut and buy precooked grill chicken breast.
- Aldi’s Flatbread
- 2 onions
- 1 chicken breast
- 1 apple
- Favorite BBQ sauce
- Shredded sharp cheddar cheese
Instructions
Caramelizing the onions
First you want to caramelize your onions. This probably takes the longest. Caramelizing the onions brings out the sweetness of the onions and they are soft and tender. Cut your onion in half and slice them up . In a large fry pan, heat up -2 tbls spoon of olive oil on medium hit heat. Cook for 10 minutes, if you unions start to get crisp lower the heat to medium low. keep stiring onions to even distribute them in the pan. After 10 minutes add a tsp of salt to the onions. Continue to cook for about 15 minutes on low until onions carmalize to a soft brown color. Place on a plate and set aside.
Grill the Chicken
Meanwhile, Grill your chicken breast. I use a cast iron grill on my stove top. cook for 5-6 minutes on each side until done in center. Set aside.
Next peel your apple and thinly slice it.
Assemble the flatbread
Now it’s time to put your flatbread together. First preheat your oven to 450 degrees. Place BBQ sauce on flatbread and spread with a brush or spoon, like you would pizza sauce. We don’t like a lot of sauce so we spread it thinly about 2 tbsp. Add a light layer of cheese, then onion, apples then chicken. Top with a light layer of cheese and drizzle additional BBQ sauce on top. You can make it your own. If you like cheese put more cheese, don’t like the onions, skip it or add your favorites.
Bake
Bake in the oven at 450 for 10 minutes or until cheese is melted. I like to turn the broiler on at the end for a couple seconds to brown the top.
There are so many options for flatbread, this is just the beginning. I like to try pears, cranberries and crumbled blue cheese next. Let me know below what types you like.
