Apple Pie Oh My!

Happy Fall Y’all! 

Well not just yet but apples and pumpkins are everywhere this mid September. I am ready to decorate! Since it is now apple season and time to pull out my favorite apple pie recipes. I have a few recipes including Instant pot recipes but up first is the classic apple pie. This is my go to apple pie recipe. I am not a huge fan of baked fruit pies but I can’t resist this one!

 

Every year the past few years we go apple picking. I have made it a mom and me tradition with Evan. We just went apple picking for Honey crisp apples last weekend at Lynd’s Fruit farm here in Columbus. It’s only one weekend out of the year to pick them and they sell out fast. I seem to miss the Honeycrisp weekend every year so we got up early this year to beat the crowds! Oh and it was crowded but we accomplished our goal.

I love taking the opportunity to get some  pictures of my son at the apple orchards. He is not a fan but I did manage to get a few good shots the past few years. Hey, I will take it!

I am not even sure where this first recipe originated but its made a little different than the traditional way of mixing sugar and spices in the apples and I have put my own tweaks in it as well. In this recipe you cook the syrup on the stove first then mix with the apples and save some to make an amazing topping. I hope you enjoy!

Yes there is a perfect pie crust and it belongs to Ina Garten. Myrecipe calls for a 9 inch double pie crust. My recipe of choice is the Ina Garten’s perfect pie crust but you can use store bought crust as well. It really does come out perfect every time so no need to come up with my own! The perfect apple!

Any sweet apple works great, its your choice! I prefer Honeycrisps for my apple pies but Granny smith, Jona Gold and Pink Lady works great too.  Just peel, core and slice. You will need about 8 medium apples or 4-6 large apples. Jus make sure its enough to fill your pie plate in a heaping pile because they will cook down.

The special sauce

I like to call this the special sauce. This yummy caramel like goodness I think is what makes this pie extra special. Cooking your sugar and spice mixture then mixing it with apples seems to make this apple pie stand out in flavor. Be sure to save some to brush on top for later!

Set your Alexa timer!

This pie you start off in a hot oven for the first 15 minutes and reduce the temperature the rest of the time. Don’t forget or you will have a burnt pie! Don’t forget about the topping! Remember I said to save the cooked sugar mixture for later. Then the last few minutes sprinkle some cinnamon sugar on top.  Let cool and serve warm. Enjoy!

Classic Apple Pie

A fall favorite, this is a classic apple pie made with a special sauce that makes this the perfect crowd pleaser.

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour
Servings 8

Ingredients

  • 1 9 inch double pie crust Check out Ina Garten's Classic pie crust or store bought pie crust
  • 4-8 Honeycrisp Apples peeled and sliced Use your favorite baking apples!
  • 1/2 Cup Unsalted butter
  • 3 Tbsp 3 tablespoon Flour
  • 1/4 Cup Water
  • 1/2 Cup White sugar
  • 1/2 Cup Brown Sugar packed
  • 1 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 1 Tsp Vanilla Extract

Instructions

  1. Preheat oven to 425 degrees F.

    2. Melt butter in saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, cinnamon, nutmeg, vanilla nutmeg . Bring to a boil.

    3. Reduce temperature and let simmer 2 minutes.

    4. Place pie crust in bottom of pie pan.

    8. Mix syrup with apples in bowl reserving a little syrup to brush on top of crust. Work fast while syrup is hot. Fill Pie crust will apple mixture and place remaining pie crust on top. Brush reserved syrup on top of pie crust just enough to coat.

    9. Bake 15 minutes in preheated oven. Reduce temperature to 350 degrees and continue baking for 35-45 minutes or until apples are soft and crust is golden. Once pie is almost done sprinkle a little extra cinnamon sugar on top of crust. Serve warm and enjoy!
