Instant Pot-Italian Sausage, Peppers & Onion Sandwiches

Sausage and peppers was and always will be a staple at any gathering or event in my family. It makes a lot and can be made into sandwiches so its the perfect food for a party or quick weeknight meal.

Cooking it in a pressure cooker makes it even easier. I know I say that quite often in my recipes but its true. The Instant Pot just makes life easier. I would never think of making sausage and peppers for a last minute supper but now I can with the Instant Pot. That is exactly what happened this particular week night. I didn’t know what to make and decided last minute since I had peppers in the fridge I would make sausage and peppers. My sausage was frozen, yep, like I said no pre-planning here.

I had just the right amount of frozen Italian sausage in my freeze for a meal and a bag of good fresh rolls. This is one dish everyone in my family eats.

I like to prep and cut up the peppers and onions first so when its time to put them in I can just dump it all. So you will first need to place the Instant Pot on Saute mode and add in the olive oil. Once heated you add your sausage( mine were frozen or fresh) the key is to brown them like they have been grilled. They don’t have to be cooked through. You can choose to cut your sausage links in half as well which I usually do.

The pressure cooker part of the cooking will do that for you. Pull the sausage out and set aside in a bowl.

Next you add in the garlic, onions and peppers to the pot, keeping it on Saute mode. Give it a few stirs for about 2 minutes and you will start to smell the peppers and garlic cooking. Add back the sausage into the pot on top of the peppers and onions.

Add the water and tomato sauce. I like to use what is called Passata. You can find it in your tomato sauce aisle. It’s a tall skinny bottle and nice ans smooth sauce. I like the consistence of it but any tomato sauce will work. Finally add in the seasonings. No need to stir. Just place the lid in the sealing position.

It takes about 8 minutes on manual setting with a quick release. Be sure to do a quick release.

Remove the lid. There will be extra liquid in the pot. With a slotted spoon scoop out the sausage, peppers and onions and place in a serving dish and serve with slices of provolone cheese and toasted rolls. Your guest will be coming back for more! Yum!

Ingredients

  • 8 Sausage Links fresh or frozen
  • 2 tbsp Olive oil
  • 2 Onions sliced
  • 4 Bell peppers( red and green) sliced
  • 2-3 garlic cloves Chopped
  • 1 Cup Passata or Tomato sauce
  • 1/2 cup Water
  • 1 tbsp Italian Seasoning

Instructions

  1. Prep by slicing up the peppers and onions and  chopping the garlic.

  2. Place Instant Pot on Saute mode. Add in Olive oil

  3. Once heated add in sausage links. They can be cut in half as well to cover the bottom more evenly.  brown the sausage links in the pot until you have an nice browned/chard look on the outside.  Remove from pot and set aside.

  4. Remove sausage and set aside. Add in peppers, onions and garlic. Saute for 2 minutes until you start to smell the garlic and peppers.

  5. Turn off saute mode. Add back in the sausage on top of peppers and onions.  then add the water, tomato sauce and Italian seasoning.

  6. Place lit in lock position in sealing position.  Place on manual cook for 8 minutes with a quick release once done.

  7. Place in serving dish with toasted rolls and slices of provolone cheese.

Sausage can be frozen or fresh.
