One day at a time and staying strong while cooking too.

One day at a time and staying strong is what I have to do.  I never would have thought I would be so involved with learning about Breast Cancer than I am now. My mother was diagnosed with breast cancer at the end of the summer which was a shocker to say the least. As she undergoes surgery next week I will be there to help and support her. Of course this brings up lots of concern for myself and since I am almost 40 I will be getting a mammogram and be more aware about staying healthy.  It’s so ironic that  in my everyday job at Thirty-One we are now offering care ribbons for all our products. What perfect timing, right? Well I wish it wasn’t for my mom but love the thought put into it and the fact you can support or honor someone battling a certain cause. These care ribbons are available until the end of December. You can visit my website: mythirtyone.com/daniellaschmidt

In the mean time all I ask is for some prayers for my mom and that all goes well. After all she needs to get better to come see me race in January! I am still in training mode for the 2014 Disney 1/2 marathon. Hopefully I can get some training runs in while taking care of my mom after surgery. I am little behind but still happy with my progress. It’s those long runs I need to get in ASAP. With the Holiday around the corner time will be an issue.

Its also that time of year and Thanksgiving is around the corner so it is time to start planning the  big meal. I will be cooking at my moms this year. I have had success with Alton Brown’s Thanksgiving Turkey recipe the past 2 years so that is what I will do again. It involved brining the turkey and it comes out so moist and tender. You can find the recipe here: http://www.foodnetwork.com/recipes/alton-brown/good-eats-roast-turkey-recipe/index.html

Some of our tradition side dishes include stuffing, which I haven’t found a favorite recipe. Its not my favorite side dish so I am still searching and for now follow the directions of my mom. Mashed Potatoes and homemade macaroni and cheese are a must. Green bean casserole by Paula Deen. I also like to always try something new each year but I haven’t had the time to look. I plan to check out Pinterest  and I will post after the holiday what I decided upon.

What are your favorite dishes for Thanksgiving? Do you plan to try something new this year? Leave a comment below.
