Electric Skillet Quick Chicken & Dumplings

It is that time of year and this Electric Skillet quick Chicken & Dumplings recipe is the perfect back to school meal. The kids are slowly getting back to school in some form of virtual or hybrid and we need to feed them well. With many people staying home we need some new ideas. I always look forward to the cooler weather, it puts me in the mood to cook more than summer.

Temp-Tations Electric skillet

I am a huge Temp-tations lover. If you don’t know what it is its a line of stoneware by Tara Tesher that is sold on QVC for the past 15 years or so. Just recently Temp-tations came out with an affordable and pretty electric skillet and I decided to give it a try. I love it on my new kitchen counter tops. It is pretty on my counter, practical and cleans up nice. This skillet unlike other is deep to serve a big crowd if needed and holds a lot. This meal was the first thing I made in it and it turned out great and fast!

The recipe

This is a quick and easy recipe. It was literally 5 pm so I had to think quick. Normally I cook my chicken slow and shred it and make dumplings from scratch but I had no time for that this time. This recipe below was adapted from an old Betty Crocker recipe using Bisquick, precooked chicken, frozen veggies, and soup. Although I used an electric skillet you can make this on he stove top too!

Its fairly simple so let’s get into it and watch the video to follow along. You can print the recipe below. Apologies because I threw this video together quickly. I promise my next one will be better!

Skillet Quick Chicken & Dumplings

This is a quick and easy Chicken & Dumpling recipes that can be cooked on in a Electric skillet or stovetop

Ingredients

  • 2 cans Condensed Cream of Chicken soup
  • 2 3/4 cups Milk
  • 1 bag Frozen mixed veggies
  • 3 cups Precooked boneless chicken ( can be frozen) I prefer rotisserie chicken

For Dumplings

  • 3 cups Bisquick baking mix
  • 1 1/2 cups Milk

Instructions

  1. Add milk, cream of chicken soup, frozen veggies to skillet and mix.

  2. Turn skillet on medium heat and bring to a simmer. About 5 minutes( depends on your appliance)

  3. Turn heat to med/high and add chicken. simmer until bubbling then turn to low. In the meantime prepare your dumpling mix.

  4. Mix Bisquick and milk together. with a spoon drop dollops of mix into simmering skillet spreding them evenly. Do not push them under liquid. Some will fall, thats ok.

  5. Place lid on skillet and keep on low heat for 8-12 minutes until dumplings are cooked through.

  6. Remove lid then serve.

I hope you enjoy and feel free to tweak it to your liking by adding different veggies. I imagine you could even use Grands bisuits and cut them up and drop in, I might have to try that later.
