Fall is in my Instant pot
This is the time a year I love to be in the kitchen, the cooler weather and the routine of school and activities slows me down a little. The changing of the seasons tend to give me a boost and renewed sense of cooking in the kitchen and even when it comes to projects and crafts.
Apple butter is usually the first thing I make for the fall season. It’s still warm out but the wind is a changing and soon the leaves will drop. Goodbye summer, hello fall! I will be ready with some Apple Butter to spread across some warm toast and a cup of tea. I hope you enjoy this apple butter recipe.
Traditionally apple butter is cooked low and slow. I have good news! You can forget low and slow! You can make fantastic fresh apple butter with your Instant Pot in just under an hour (20 minutes cook time). Even better, you don’t need to peel the apples! I have made this in my 3 qt Instant Pot as well as my 6 qt Instant Pot.
Guys, this is so easy peasy and makes great gifts for the holidays. You can can the apple butter for gifts is great because has a 2 year shelf life and can be stored in a pantry. Or you can freeze it and store it for 6 months.
How to cook
So grab your apples, core and quarter them and place in the pot. You don’t need to peel the apples. Dump in your dry ingredients on top, add in the vanilla, apple cider and set your Instant pot on Manual for 8 minutes.
The apples will make additional liquid so don’t be alarmed by only using ½ cup of cider.
Natural release the apples which takes about 15 minutes. Open the lid and remove the cinnamon sticks. If you don’t have cinnamon sticks use ½ tsp of ground cinnamon. Don’t forget to remove the sticks because next you immersion blend everything together until nice and smooth. If you don’t have an emmersion stick blender you can use a regular blender.
Last step is to set your Instant pot to Sauté setting on low and cook and stir for about 5-10 minutes. At this point I taste it, sometimes I add a little more cinnamon depending on taste. Cool and enjoy on a fresh piece of white bread or toast.
Storing Options
At this point you can choose to completely cool the apple butter and place in airtight containers and refrigerate or freeze for up to 6 months.
You can can your apple butter as well and store in your pantry. I once learned about another way to can on Pinterest called Inversion canning, don’t do this, its deemed unsafe. You can find traditional water bath canning methods online. So I will leave it up to you to choose how you would like to store your apple butter.
You will find the recipe below. Let me know how it turns out. Check out my Classic Apple Pie recipe too!
