Its been a busy year already! Now that the holidays are over we are back to the daily grind and back to figuring out quick weeknight meals.
Mine of my weekly go to Instant pot meals is Chicken Noodle Pot Pie casserole. It’s quick especially on scout nights and is done in under 30 minutes. If you are looking for a dump and go recipes this is it.
This is different from my chicken & noodle recipe as these are done with uncooked wide egg noodles and fresh dozen veggies , chicken broth, cream and chicken.
Its as easy saluting the chicken , adding spices the dump and cook.
Enjoy and feel free to add your favorite spices .
Add more cream or chicken broth if needed or seems dry.
Ingredients
- 3 boneless chicken breast
- 2 tbs olive oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1tsp salt
- 1/2 tsp pepper
- 1 16oz bag dry wide egg noodles
- 1 16 oz bag frozen mix veggies
- 4-5 cups chicken broth
- 1 cups heavy cream
Instructions
- Cut chicken into bite size pieces
- Set Instant Pot on sauté and add olive oil
- Add chickken and spices and sauté until chicken turns white ( about 3 minutes)
- Dump noodles then frozen veggies into pot
- Add chicken broth
- Cover and set on manual for 5 minutes
- Once done give it a quick release
- Add cream and mix
- Place on sauté and mix can saute for 1- 2 minutes.
- Serve
