Perfect Instant Pot Mashed Potatoes

 If you are not making your mashed  potatoes in your instant pot you need to start now!  This rediculously easy way of cooking potatoes is a must do for your big holiday meals and even weeknight meals.

What is great about a pressure cooker is it doesn’t matter what the amount of vegetables do you put in whether it’s one potato or 5 pounds of potatoes the timing is always the same. (Meat is a little different when it comes to timing).

They key thing is to not overmix your potatoes or they will become gluey and don’t under cook them or they will be very lumpy. So be careful when using a mixer. Don’t over-beat. Also feel free to change up ingredients to your favorite. Some people like to add garlic, cream cheese but this recipe is for basic traditional fluffy mashed potatoes. 6 minutes is the magic number for cooking time!

This can be done all in one pot! Once you cut up your potatoes into even pieces just drop them in the pot using the rack, add water and set for 6 minutes with a quick release.  When done drain the water from the pot or transfer potatoes to you stand mixer if using one. Add butter, half and half , and salt. Mash potatoes with a potatoes mashed or mixer until fluffy. That’s it. Check out my easy Instant Pot  Mac N Cheese recipe too! 

You can serve from the pot or transfer to baking dish and keep warm in oven when time to eat.  In my case I am making it ahead of time and will reheat it in the oven on Thanksgiving Day. This a super fast recipe so making it the same day is perfect too.

Perfect Instant Pot Mashed Potatoes

You can adjust the amount of potatoes but the cooking time stays the same. Add cloves of garlic in pot for garlic mashed potatoes You can substitute chicken broth for water

Ingredients

  • 5 lbs russet potatoes
  • 2 cups water
  • 1/2 cup of butter ( 1 stick)
  • 2-4 tbs half n half or milk
  • 2 tsp salt

Instructions

  1. Peel and cut potatoes into quarter size pieces. Making sure they are similar in size.
  2. Add water to Instant pot
  3. Place rack on bottom and potatoes on top.
  4. Place lid in lock position and set it on manual setting for 6 minutes with quick release.
  5. If mixing in pot drain water from pot. Add butter , Half n half , and salt.
  6. Mash potatoes with a potatoe masher or use a mixer to whip the potatoes. Be careful if using a mixer not tonover mix or they will become gluey and not fluffy.
  7. Serve.
