Yes, you bet I said Disney’s Tonga Toast!
If you haven’t had a chance to try Tonga Toast at Disney’s Polynesian Resort you are in for a real treat!
A Popular Walt Disney World Breakfast food!
I have figured out how to make this delicious super popular breakfast entrée. This is available at Disney’s Kona Cafe and Captain Hooks food court at the Polynesian Resort. Since we only visit Walt Disney World but a few times a year I a super excited to be able to cook it at home. The best part is I made it via the air fryer! One of my favorite kitchen appliances next to my Instant Pot. That means it’s even healthier than the original that is deep-fried goodness.
Now this recipe is how to make one Tonga toast but the egg mixture can accomodate a couple. Just repeat the construction of the bread and bananas. It will probably make 3 or 4 total. I like to buy my pre cut brioche bread at Aldi’s but you can certainly use a bakery bread and slice it thick 2″ and make a pocket instead to stuff the banana’s in to as well.
This happens to be one of my favorite breakfast foods at Walt Disney World!
I own a few Disney Parks cookbooks new and old and I love reading them, especially the recipes from restaurants that are no longer there. Although I didn’t find this one in them I hope to try out of few later.

Ingredients
- 2 slices 1"-1 1/2" brioche pre cut bread slices
- 1 banana
- 2/3 cup of sugar + 1 tbsp
- 2 tbsp of cinnamon + 1 tsp
- 4 eggs
- ¼ cup of milk
- ½ teaspoon of vanilla
Instructions
- In a bowl big enough to fit your bread, mix the 2 tbsp cinnamon and sugar, then set aside.
- In another large bowl mix the egg, milk, 1 tbsp sugar , 1tsp cinnamon and vanilla.
- Slice a banana in half, then cut in half again lengthwise.
- Take one bread slice and dip one side to coat( do not soak) This helps bind the bread together. Place banana slices across the top of bread. Place the other slice of bread on top and dip entire bread in egg mixture and place is air fryer that is greased with oil.
- Set air fryer at 380 degrees for 4 minutes on one side flip and 4 minutes on other or until golden brown.
- Remove from fryer and carefully toss Tonga Toast in bowl with cinnamon sugar mixture.
- Serve with fresh fruit such as banana, strawberries and blueberries with warm maple syrup!
- This egg mixture can make several servings of Tonga Toast.
Notes
The bread I used was from Aldi's. This recipe can make several servings. If not using pre cut bread you can cut it thick to 2" and make a pocket and stuff banana's inside as well.
