Disney’s Ohana Pineapple Coconut Bread

Yes you can make it at home! This is the bread served at Ohana at the Disney Polynesian Resort. This Ohana’s famous Pineapple Coconut bread is used for both breakfast bread , dinner bread. It is also part of the famous Ohana Bread Pudding a la mode with banana caramel sauce!

After reading recipes and watching various You tube videos there are many versions of the recipes out there. I came up with my own minor changes to the recipe. It worked out great and less messy than what I have found online. 

I used half the bread to serve with Dinner at our Ohana at Home themed Dinner party( more of that to come so stay tuned). We had everything from decorations, to Ohana noodles, pot stickers, coriander chicken wings and skewers of steak, chicken and shrimp! Stay tuned for another blog post soon about it and how you can do it!

Ohana’s Pineapple Coconut Bread

Delicous pineapple coconut bread adapted from the recipe at Disney's Ohana Restaurant

Ingredients

Dough

  • 1 3/4 Cups Water
  • 1 Egg Yolk
  • 2 tbsp Shortening
  • 4 1/2 cups Bread flour Regular flour may be used but high gluten flour like bread flour is recommended
  • 1/2 tsp salt
  • 1/3 cup sugar
  • 1 tbsp yeast

Pineapple mixture

  • 1 cup crushed Pineapple drained
  • 1 cup Sweetened coconut ( unsweetened can be used)
  • 1/2 cup sugar
  • 2 tbsp Corn Starch

Instructions

Dough

  1. Mix all ingredients in order into stand mixer. Mix with paddle and switched to dough hook when all ingredients are well mixed. Knead with dough hook for 5-8 minutes until sides of bowl is clean. Add more flour or water if needed.

  2. Form into ball and place in a lightly greased bowl covered with plastic wrap until dough doubles in size ( about 1 hr)

Pineapple Coconut Mixture

  1. Drain pineapple in strainer to remove most of the liquid

  2. Add pineapple and coconut into a bow and mix. Combine sugar and cornstarch together then add it to the pineapple coconut mixture and combine. Refrigerate for 1 hour.

Preparing the bread for baking

  1. Place dough on lightly floured surface. Roll out to form about a 1" thick rectangle big enough to fit in your 9×13" pan

  2. Spread pineapple coconut mixture evenly over dough.

  3. Fold dough into thirds. Take one end and fold to the middle, then the other end and fold to the middle so both ends are overlapping. Seealthe edges with your fingers.

  4. With light pressure take rolling pin to roll out dough to fit in your 9×13" baking dish.

  5. Place in lightly greased 9×13" baking dish. Score top of dough for even servings.

  6. Let dough rise until dough is halfway up the pan.

  7. Bake in a 350 degree oven for 25-35 minutes until top is lightly browned.

The above recipe is just for the bread itself. The other half of my bread I used to make the famous dessert! Yes, You can also make this into the famous Ohana Bread Pudding A La Mode with Banana Caramel Sauce. I used this recipe I found from The Disney Chef and followed the instructions for making the bread pudding dessert. It turned out amazing!
