Delicous pineapple coconut bread adapted from the recipe at Disney's Ohana Restaurant
Mix all ingredients in order into stand mixer. Mix with paddle and switched to dough hook when all ingredients are well mixed. Knead with dough hook for 5-8 minutes until sides of bowl is clean. Add more flour or water if needed.
Form into ball and place in a lightly greased bowl covered with plastic wrap until dough doubles in size ( about 1 hr)
Drain pineapple in strainer to remove most of the liquid
Add pineapple and coconut into a bow and mix. Combine sugar and cornstarch together then add it to the pineapple coconut mixture and combine. Refrigerate for 1 hour.
Place dough on lightly floured surface. Roll out to form about a 1" thick rectangle big enough to fit in your 9x13" pan
Spread pineapple coconut mixture evenly over dough.
Fold dough into thirds. Take one end and fold to the middle, then the other end and fold to the middle so both ends are overlapping. Seealthe edges with your fingers.
With light pressure take rolling pin to roll out dough to fit in your 9x13" baking dish.
Place in lightly greased 9x13" baking dish. Score top of dough for even servings.
Let dough rise until dough is halfway up the pan.
Bake in a 350 degree oven for 25-35 minutes until top is lightly browned.
