I don’t think there is anyone on the planet who can’t pass up a cheesy bowl of macaroni & cheese! Well, except for my husband, don’t ask, it’s a struggle in our household because he doesn’t eat cheese. We eat it anyway without him!

My old way

I have a really great recipe I always used and baked it in the oven. It took a long time  because you have to make a rue, melt the cheese on the stove top, boil the water to cook the macaroni then mix and bake it in the over and dirty about 3-4 different dishes.

The New way

Then there comes the Instant pot! Mac & Cheese done in one pot in under 25 minutes! Sometimes I forget I can make this for weeknight dinners because the traditional way was always for special occasions, holidays or weekends because it takes so long.  Now my son would enjoy this every night of the week if he had a choice.

On weeknights I am a last-minute kind of cook. I did plan to make some BBQ ribs in my instant pot tonight so that was in my favor. You can find my recipe here,they literally fall of the bone! It wasn’t until 4:30pm that I decided to make mac & cheese.

What is great about this recipe is most items you have on hand. Macaroni, butter, cheese, chicken broth, sour cream and a few spices. Some of you might be surprised by the sour cream as most recipes use milk or heavy cream. The sour cream just makes the dish more creamy than just milk or cream. I have made other Instant Pot Mac & Cheese recipes that call for heavy cream. I don’t know about you but I never seem to have it on hand, however sour cream I do. 

The noodles are cooked in the chicken broth for 5 minutes with a quick release. Then you just mix everything else in. That is it. You can if you like to have that crunchy topping place it in a casserole dish , sprinkle cheese or breadcrumb and bake it at 425 degrees to brown the top. It’s so awesome to only have to clean 1 pot!

Cheesy Creamy Instant Pot Mac & Cheese

This Cheesy ,creamy macaroni & cheese is the perfect side dish for a weeknight meal or special occasion.

Ingredients

  • 1lb elbow macaroni
  • 4 cups chicken broth
  • 4 tbs butter
  • 1/2 cup sour cream
  • 3 1/2 cups shredded sharp cheddar cheese
  • 1//4 tsp nutmeg
  • 1/2 tsp dry mustard or 1 tsp brown mustard
  • 1/2 tsp hot pepper sauce or cayenne pepper(Optional)
  • salt & pepper to taste

Instructions

  1. Add macaroni ,chicken broth, butter to pot. Place lid on and place on seal.
  2. Set on manual for 5 minutes and give it a quick release.
  3. Give a quick stir and keep on warm setting
  4. Add cheese, sour cream, nutmeg, mustard, hot sauce and mix until cheese is melted and creamy.
  5. Salt and pepper to taste.
  6. Serve.

Notes

If you want a browned crunchy topping. Add Macaroni and Cheese to a casserole dish, Sprinkle additional cheese on top and bake at 425 for 10-15 minutes until browned.
