Air Fryer Fried Zucchini Rounds or Sticks

One of the best snacks from our garden! We grow a zucchini plant in our garden every year. It yields lots of zucchini, almost too much so I needed to figure out what to do with it all. It’s not a favorite of my husband or son but it’s now one of the best summer veggie snacks I can give my son that he likes.

 

It’s amazing how crispy and crunchy they come out of the air fryer with just a few spritzes of oil.  Once cooked you top them off with powdered sugar. Yes, I said powdered sugar! I know it sounds really weird but trust me on this, it somehow makes it amazing! I had come across a recipe once that called for it so I tried it and never looked back.

Tools you will need:

Air fryer- I prefer a 5 qt size like this Power XL 5.3 qt Air Fryer

Oil Sprizter like this EVO Oil Spray bottle

3 bowls or trays like these breading prep trays

Tray like a Tara at Home 9×13 Unlimit tray

Ramikins like Tara at Home Rammies for dipping sauce.

It’s a really easy recipe and you can even make these up and freeze before frying so you can pop them in for a quick snack later.

Air Fried Zucchini Rounds

Ingredients

  • 2-3 Zucchini
  • 1 cup Flour
  • 1 egg
  • 1/4 cup milk
  • 1/2 cup Italian seasoned breadcrumb
  • 1/2 cup panko breadcrumb
  • Powdered sugar used for sprinkling on top of cooked Zucchini rounds

Instructions

  1. Cut zucchini 1/4" thick rounds or in sticks if preferred

  2. Place flour in a bowl and season with salt & pepper.

  3. Mix  together egg and milk in a separate bowl

  4. Mix breadcrumbs in another bowl.

  5. Dip each zucchini round in flour then Egg mixture then coat in breadcrumb

  6. Grease bottom of your airfyer with oil spritzer. Place breaded zucchini rounds in a flat layer in air fryer basket. Spritz top of zucchini rounds with oil.

  7. Cook at 390 degrees for 8-10 minutes. Flipping 1/2 way through. Cook until golden brown. 

  8. Sprinkle with powder sugar ( I know this sounds reawlly weird but its amazing) and serve with marina sauce for dipping.
